Zucchini and Feta Fritters
3 cups peeled and grated zucchini
1 package (350 grams) firm tofu, crumbled
1 cup feta cheese, crumbled
3⁄4 cup feta cheese, crumbled
1 package (350 g) firm tofu, crumbled
½ cup herbs, de-stemmed and finely chopped (e.g. dill, parsley and chives)
2 cloves garlic, minced
1 teaspoon salt
¼ teaspoon finely ground black pepper
3-4 tablespoons oil of choice for frying
- Place the peeled and grated zucchini in a cheesecloth or paper towel and squeeze as much liquid out as you can. Alternatively, place the zucchini in a colander or sieve and press out as much liquid as you can.
- Place the zucchini into a large mixing bowl and add the tofu, feta cheese, bread crumbs, eggs, herbs, garlic, salt and black pepper. Mix until combined.
- In a large skillet, heat around 1 tablespoon of oil over medium heat. Form the mixture into burgers and place in the skillet. Cook for 2-3 minutes and then flip and cook for 2-3 minutes on the other side. You should be able to cook about 4 at a time and get a total of 13-15 burgers.
