Zucchini and Feta Fritters


3 cups peeled and grated zucchini
1 package (350 g) extra firm tofu, crumbled
1 cup feta cheese, crumbled
3/4 cup bread crumbs (made from a refined flour like white flour or rice flour)
2 eggs
1/2 cup herbs, destemmed and finely chopped (examples include dill, parsley, and chives)
2 cloves garlic, minced
1 tsp salt
1/4 tsp finely ground black pepper
3-4 tbsp oil of choice for frying


  • Place the peeled and grated zucchini into a cheesecloth or paper towel and squeeze as much liquid out as you can. Alternatively, place the zucchini in a colander or sieve and press out as much liquid as you can.
  • Place the zucchini into a large mixing bowl and add the tofu, feta cheese, bread crumbs, eggs, herbs, garlic, salt and black pepper. Mix until combined.
  • In a large skillet, heat around 1 tbsp oil over medium heat. Form the mixture into burgers and place in the skillet. Cook for 2-3 minutes and then flip and cook for 2-3 minutes on the other side. You should be able to cook about 4 at a time and get a total of 13-15 burgers.
