Turmeric Tofu Scramble


1 tablespoon oil for sautéing
1 clove garlic, minced
1 tablespoon chives, finely chopped
1 package (350 g) firm tofu, crumbled
3 roasted red peppers from jar, diced; ensure skin is removed and rinse if they are packed in vinegar
1 teaspoon lemon juice
1 teaspoon ground turmeric
½ teaspoon ground cumin
½ teaspoon salt
¼ teaspoon finely ground black pepper
Avocado (optional for serving)


  • In a large skillet, heat oil over medium heat. Add garlic and chives and sauté for one minute until soft.
  • Add the tofu, red peppers, lemon juice, turmeric, cumin, salt and black pepper, and cook for 5-7 minutes, stirring occasionally.
  • Serve with avocado, if desired.
